  • Rule Violation and Requirement: VIOLATION OF SECTION 3-501.16 *PRIORITY* Potentially hazardous food is not maintained at proper hot or cold holding temperatures, specifically:
    Foods in walk-in cooler temped as follows: turkey-47F, ham-47F, blue cheese-47F, cheddar cheese-46F. These foods have been in walk-in cooler for over 24 hours. Correction: Person in charge (PIC) discarded these foods during inspection. Also, PIC will contact a Repairman who can repair the walk-in cooler later today.
  • Rule Violation and Requirement: VIOLATION OF SECTION 7-102.11 *PRIORITY FOUNDATION* Working containers of poisonous or toxic materials are not clearly labeled, specifically:
    Observed unlabeled spray bottle in kitchen area. Correction: Person in charge labeled the spray bottle during inspection.
  • Information: Cold Food Temperatures. Temperature of 41°F(5°C) or colder is required. Based on thermometer accuracy, two degrees F or one degree C tolerance is given.
    Walk-in cooler: cheese-46F, ham-47F, turkey-47; Prep coolers-40F and lower; Upright refrigerator-39F; Freezers--OK
