    Observed butter stored in an ice container on the counter with a measured internal temperature of 60 F. The butter is not time marked for discard and is reportedly returned to refrigeration after service each day. **The butter was discarded at today's inspection. Use either temperature of time as a public health control for potentially hazardous foods.
  • Rule Violation and Requirement: VIOLATION OF SECTION 3-501.17 *PRIORITY FOUNDATION* Ready-to-eat food is not properly date-marked, specifically:
    Observed a container of sausage gravy in the 3-door reach-in cooler with no date mark for when it was prepared. **CORRECTION** The gravy was dated for the date it was prepared upon request.
