Information: Notes/Recommendations: A hose is stored on the floor under a shelf unit by the walk in. ideally, this should be stored off the floor to facilitate cleaning. The hot and cold water at handsinks in the prep area are controlled by foot pedals. It might be good to just have one foot pedal as trying to mix water with the foot pedals makes it difficult to get water at a comfortable temperature at these sinks. You may wish to just put one foot pedal and have the water pre mixed at at least 100 degrees F.
