  • Rule Violation and Requirement: VIOLATION OF SECTION 3-501.19(A)(B)(2)(C)(2,3) *PRIORITY FOUNDATION* The use of time as a public health control is not properly monitored, food is not properly marked or written procedures have not been developed, specifically:
    Observed peanut sauce, curry sauces stored outside of temperature control on the line. The internal temperatures were measured at 60 F. Observed cooked tofu and chicken in the steam table on the line with measured internal temperatures of 121-129 F. The PIC stated that the sauces and hot food items will be discarded after lunch and fresh foods are made for dinner rush. A temperature log of cooking temperatures and times were available for review. However, there was no written procedure for using time as the public health control. **CORRECTION** Please develop a written procedure for using time as a public health control and identify each individual food item using the procedure.
  • Rule Violation and Requirement: VIOLATION OF SECTION 7-202.12(A)(2)(3)(B) *PRIORITY* Poisonous or toxic materials are improperly used or applied, specifically:
    Observed quaternary ammonium solution in the 3-compartment sink with a measured concentration of 500 ppm. Hot water temperatues were eroding the concentrate at a rapid rate increasing the concentration. **CORRECTION** The sanitizer was discarded. Fresh QAC sanitizer was prepared at 200 ppm concentration. The dishes were rinsed and sanitized in the fresh solution.
  • Information: Cold Food Temperatures. Temperature of 41°F(5°C) or colder is required. Based on thermometer accuracy, two degrees F or one degree C tolerance is given.

I love the food so good. I'm going to order the Veri Wraps for our employee lunch. Iced Tea is wonderful and so different.I found the restaurant to be very clean and everyone so nice. Please stay in Tualatin
