No other CFPMs for this facility.Facility has not had employee(s) take and fail one of the recognized CFPM exams in the past year.Facility not in use at time of inspection.-reach in 1 with half and half at 41F. Reach in 3 and 4 at 39F and 37F.-food prep is no longer done at this facility. Food is preped in event center kitchen and brought up as needed.-no dishes done in this permit-all dishes brought to event center stewarding-single service items stored ok-ice machine clean; scoop properly stored-restrooms stocked and clean-regular pest control by Ecolab; no issues noted at time of inspection-discussed employee health - ensure anyone with gastrointestinal symptoms (vomiting / diarrhea) is excluded for 48 hours after symptoms stop.

Do not allow liquid spills to remain inside reach in units. All spills shall be cleaned immediately.

Replace all missing ceiling tiles overhead. Ceiling tiles over entrance are still missing from prior year insepction in 2013. Replace missing ceiling tiles overhead over "Traulsen" cold holding units and clean all debris on top of cold holding units of all physical debris that has landed on top of them.

No food operations observed at time of inspection. Automatic lighting still not functional. This hallway kitchen tends to be the "catch-all" area and was observed full of debris and loose garbage such as broken glass; and other odds and ends. It is recommended that all moveable equipment is removed from this kitchen and a deep cleaning is done throughout. Adequate lighting is crucial to be able to clean properly. The facility has a work order in to repair lights. Lights must be repaired within 7 days. A reinspection is required for compliance.

Observed "Traulsen" 2 door reach in refer where NON- PHF beverages and butter is stored to be at recorded temperatures between 50-52 F. Butter was moved out of unit and prepack beverages remained. Do repair this unit to be cold holding at 40 F or lower to prevent the improper cold holding of PHF foods such as butter.

Observed ice machine deflector plate inside unit with visible growth and soil buildup. Clean inside of unit on a regular basis to prevent contamination of ice that is used for consumption.
