All exposed wood needs to be sealed to make surface smooth; sealed; durable; and easily cleanable. Correct by 9/15/15. Observed wood on top of cheese cooler - being used for service when onsite - wood strip acts as a counter area - make sure wood strip is sealed on top and on sides. Particle board on bottom exposed seal area exposed with trim or paint to make surfaces smooth; sealed; durable; and easily cleanable. Correct by 9/15/15.

Clean thoroughly to prevent vermin attraction and maintain sanitary conditions.Observed electrical wire on floor - Underneath wire and between the floor is dirty. The wire directly on floor is making areas hard to clean. Clean floor area. If area is not cleaned regularly wire must be 6' off gorund so staff can access all floors where wires are located. Clean regularly and correct by 9/11.

Observed dust building up on panel above prep and service areas. Clean by 9/15/15. Clean areas when no food service is taking place.Observed in mop sink area - walls on left side of mop sink area have exposed dry wall. This wall must be painted or have frp material installed to make surface smooth sealed; sealed easily; cleanable. All walls in this mop sink room will need to be painted where storage is located. Correct by 9/15/15.
