This is pre-license inspection for the opening of Feng's Kitchen. The restaurant is planning on opening to the public on January 24th, 2011. The establishment is approved for opening based upon the following conditions: 1. The establishment must obtain all necessary permits and/or approvals from all pertinent inspectors/regulatory authorities. 2. Mrs. Feng must become a certified food manager within 90 days of opening. An application for to become a certified manager has been provided. Mrs. Feng has obtained the Serv-Safe educational credit exam #7426604. 3. Soap and paper towel dispenser must be installed at each handwash station and bathrooms. Recommend non-hand operated dispensers. 4. A barrier is required between the hand wash sink and the food preparatory sink to prevent cross contamination from splashing during the cleansing of hands. 5. Handwashing signage is required on both bathrooms indicating that employees shall wash their hands prior to returning to work. Handwashing procedures/instructions shall be posted at each handwash station inside the kitchen for employee reference. 6. All surfaces inside the establishment shall be cleaned to sight and touch prior to opening. Food contact surfaces shall be cleaned and sanitized prior to commencing food preparation. Discussed food handling procedures, glove use, when-to-wash protocols. A verbal employee health policy is in place for employees per Mr. Feng. Three compartment sink available, food preparatory sink, two handwash sinks, and a mop sink. The high-temperature dishwasher is achieving a plate surface temperature of 161 f.
