    3-501.14 - EXCEEDING 6 HOURS, MADE THE PREVIOUS DAY. CORRECTION MADE: THE SOUPS WERE DISCARDED. THE FOOD MANAGER SAID FUTURE SOUP AND SAUCES WILL BE COOLED IN SHALLOW PANS, STACKED IN A SPEED CART AND PLACED IN THE WALK-IN COOLER. COOLING WILL BE MONITORED WITH A STAB TYPE FOOD THERMOMETER TO ASSURE THE PRODUCT COOLS FROM 135*F to 70*F within 2 hours and FROM 70*F to 41*F with 4 hours. Otherwise the product will be discarded.
