    Observed through interview with person in charge that potentially hazardous foods are not cooled using the 2 step process within 6 hours. Food is left out on counter to cool at room temperature and then placed in cooler. Potentially hazardous foods must be rapidly cooled from 135 degrees F down to 70 degrees F within 2 hours. The food then has 4 hours to cool down to 41 degrees F or below within 4 hours. The person in charge was educated on this procedure in my presence. Violation corrected.
