Employee stated lettuce was prepared at 12:30 that day. Corrected at time of inspection after talk with owner. When cooling potentially hazardous food store in shallow metal containers without a lid and don't store anything more then 2 inches deep. Lettuce was placed into smaller containers to cool faster and the lids were removed. Corrected.
