THE PERSON IN CHARGE STATED THAT THE PRACTICE OF CONVEYING MELTED ICE WATER INTO A BUCKET FOR MANUAL DISPOSAL HAS BEEN IN USE IN THE ESTABLISHMENT SINCE APPROXIMATELY 1978. PER THE APPROVAL OF THE HEALTH DEPARTMENT EAST DISTRICT MANAGER, FURTHER EVALUATION OF THE ABOVE PRACTICE WILL BE CONDUCTED TO DETERMINE WHAT OPTIONS AND/OR CORRECTIVE ACTIONS MAY BE NECESSARY TO ENSURE THAT THE MELTED ICE WATER FROM THIS ICE BIN IS CONVEYED IN A MANNER CONSISTENT WITH SECTION 5-402.13 OF THE 2005 FOOD CODE. PENDING FURTHER EVALUATION WITH THE HEALTH DEPARTMENT, A RE-VISIT INSPECTION WILL BE CONDUCTED WITHIN 10 - 30 DAYS OF TODAYS INSPECTION. COMMENTS: THE ICE BIN APPEARED TO BE SEATED UPON FOUR LEGS AND DID NOT APPEAR TO BE PERMANENTLY MOUNTED TO THE FLOOR. APPROXIMATELY 5 - 10 FEET FROM THE ICE BIN IS A SATELLITE DRAIN BOWL THAT DISCHARGES INTO A LARGE WASTE PIPE SLOPED TOWARDS THE 3 COMPARTMENT SINK.
