    Potentially hazardous food meant to be held cold must be held at 41F or below. Observed in the walk in cooler beef was at 44F, salsa was 44F, guacamole was 43F. The inside temperature of the walk in was 37F. It was concluded that the door was being left open and some items were not allowed to maintain a temperature of 41F and below. Corrected at inspection the items were placed in an ice bath to bring them down to 41F and a more conscious decision from employees to keep the door fully closed after opening.
