EQUIPMENT AND UTENSILS - DURABILITY AND STRENGTH Observation: The table that is used for storing hot hold unit is made of a nondurable material (raw wood on sides of table). The table needs to be replaced with a table that is easy cleanable, smooth and non-porous.
Correction: Provide equipment or utensils that are durable under normal conditions.
EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS Observation: Farberware single basket fryer at the bar is not ANSI certified or approved by the department. Remove from the restaurant.
Correction: Unapproved equipment shall be removed from food service.
FOOD CONTACT SURFACES - NON TCS/PHF -FREQUENCY (repeated violation) Observation: Ice machine has slime/mold build up on the inside services of the unit and needs to be cleaned.
Correction: Follow cleaning schedule as required in 4-602.11 (D) or clean in-use utensils every 4-hours.
NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY Observation: Both Amana freezers and the Beverage Air 3 door freezer in kitchen need to be cleaned of food debris/spills on shelves and floor of unit. Clean the outside of the pizza oven of grease build up from the unapproved Farberware Single Basket fryer. Clean the two bar beer coolers the left of the register of water and mold on the inside of the units.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
FLOOR AND WALL JUNCTURES, COVED, AND ENCLOSED OR SEALED Observation: Floor and wall juncture in the kitchen next to the exit to outside by food prep sink is not coved and the tiles are pulling away from the wall at the dishwash area and handwash sink area which will cause the floor/wall juncture to not be coved properly.
Correction: Provide base coving.
HANDWASHING SIGNAGE Observation: No handwashing signage provided at the mens restoom handwashing sink near the kitchen.
Correction: Provide handwashing signage at all handwashing sinks used by food employees.
CONTROLLING PESTS - INSPECTING PREMISE Observation: Evidence of fruit flies inside of several liquor bottles and flying around bootles behind bar. Discard bottles with dead fruit flies in them.
