Observation: Chlorine sanitizer within the spray bottle is too concentrated (200+ ppm).
Correction: Reduce chlorine concentration to between 50 and 100ppm.

- Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site) (repeated violation)
Observation: Breakfast sausage within upright kitchen cooler is not date marked. Manager stated the sausage gets used within 2 days. Also, sausage within "ziploc" bags in basement chest freezer are not date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Correct By: 02-Apr-2015
- THERMOMETERS - FOOD - ACCURACY
Observation: Food thermometers (3) used in food establishment are not accurate to +/- 2°F. Thermometers are reading 10 to 15 degree's high.
Correction: Calibrate or replace thermometers.

Observation: Working container of chlorine sanitizer within spray bottle is not labeled with contents.
Correction: Label working containers.

Observation: Drinking cup without cover and bowl of salad w/fork observed in food preparation area of kitchen.
Correction: Provide approved beverage container in food preparation area. Do not eat within food prep area.

Observation: Bulk sugar and flour are stored in unlabeled bins.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.

Observation: Spoon handles are in contact with blue and feta cheese in their respective containers.
Correction: Store in-use utensils in the food item with handle extended, or on a clean surface.

Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.

Observation: Inside of microwave is soiled.
Correction: Clean and maintain microwave.
