Observation: There are loaves of bread in the walk-in cooler that are uncovered.
Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.
- NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
Observation: All three freezers have frost build up. There is grease and duct on the underside of the flat top and the board on the front.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The plywood behind the fryer is exposed around the bottom and left edge. The ceiling tiles are acoustical rather than smooth and non-porous. There are floor tiles missing under the fryer. The edge of the walk-in cooler is lifting causing a gap.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.
- FLOOR AND WALL JUNCTURES, COVED, AND ENCLOSED OR SEALED
Observation: The coving in the corner under the dish machine is missing.
Correction: Provide base coving.

Observation: The fish and beef stored on the floor in the walk in freezer.
Correction: Store all food items 6 inches above the floor.

Observation: The exterior garage door in the back storage room was not closed at the start of the inspection but was closed during the inspection.
Correction: Make the door self-closing and tight fitting to prevent the entrance of insects or rodents.

Observation: Inside of microwave is soiled.
Correction: Clean and maintain microwave.
