- Critical: RTE/PHF-TCS PROPER DATE MARKING (corrected on site)
Observation: 2 containers of food in outside walkin is improperly date marked. Also containers had buildup of black mold on outside of containers. Food and containers were immediately discarded.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- IN-USE UTENSILS, BETWEEN USE STORAGE
Observation: Knife holder by fryers and stove contained food debris. This knife holder must be cleaned and sanitized on a regular basis to prevent cross contamination.
Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
- EQUIPMENT AND UTENSILS - EQUIPMENT - REASSEMBLING, CONTAMINATION
Observation: lids on pizza prep tables are in poor repair. Loose fitting and difficult to open and close to accomodate proper functioning lids do not allow for proper fit for temperature control and for food protection via lack of proper contact for sealing against prep table surface provides a hazard for cross contamination of outside sources.
Correction: Assemble equipment in a manner that food contact surfaces are not contaminated.
- FLOORS, WALLS AND CEILINGS - CLEANABILITY
Observation: The floor area near cook, fryer, stove area contains grease buildup and food debris. Corner by fryer cook area and behind fryers and stove area needs more cleaning.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.
