    Observation: The hood filters in the small hood near bacl of kitchen are very greasy.
    Correction: Clean filters on a more frequent basis to prevent grease build up.

    Observation: Several pieces of kitchen equipment/fixtures are soiled/dirty. Hot holding cabinets, shelves, behind fryers, bun racks, etc.
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
  • FLOORS, WALLS AND CEILINGS - CLEANABILITY
    Observation: There are many areas throughout the kitchen where the grout has worn away between quarry tiles.
    Correction: Regrout areas as needed.
  • CLEANING, FREQUENCY AND RESTRICTIONS
    Observation: The kitchen floor needs a thorough cleaning, especially in areas under equipment, along walls, back room, etc.
    Correction: Clean the physical facilities (floor) at a frequency necessary to keep them clean.

    Observation: Significant food preparation is occurring without the use of a food preparation sink. Tomatoes, onions and lettuce are being washed and cut/sliced.
    Correction: Because of the change in operator, a food preparation sink must be installed. Correct By: 18-Aug-2014
  • HANDWASHING SIGNAGE
    Observation: No handwashing signage, soap or paper towel dispensers are provided at front handwashing sink. This sink has not been used for handwashing.
    Correction: Provide handwashing signage, soap and paper towel dispensers at both handwashing sinks. Both sinks must be available and used by food employees.
