- FOOD CONTACT SURFACES - ENCRUSTED ACCUMULATIONS
Observation: The following surfaces are soiled: single door True cooler inside, cutting board (underneath) on True single door cooler, hot hold units, sides of fryer, behind fryers, hood, hood filters, etc.
Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment.
- HANDWASHING SINKS, INSTALLATION - NON-HAND OPERATED
Observation: Handwashing sink is not non-hand operated. Install non-hand operated handles on employee hand wash sinks.
Correction: Employee handwashing sinks shall be non hand operated and if metered shall provide a flow of water without the need for reactiviation for at least 15 seconds.
- GARBAGE/REFUSE - MAINTAINING REFUSE AREAS AND ENCLOSURES
Observation: Outside garbage corral had cardboard boxes stored on the ground and there was food/grease debris on the ground. Clean dumpster area and maintain.
Correction: Remove all unnecessary items from storage area or enclosure used to store refuse, recyclables, and returnables.
- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: Mat behind fryer area is carpet, unapproved. Replace with smooth, nonabsorbant and easily cleanable surface.
Correction: Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
- INSECTS AND RODENTS - OUTER OPENINGS - SOLID, SELF-CLOSING AND TIGHT FITTING DOORS
Observation: The exterior back door had a gap at the bottom, repair and install a rodent proof floor sweep/weather stripping.
Correction: Make the door self-closing and tight fitting to prevent the entrance of insects or rodents.
