Observation: There are green bell peppers stored under raw eggs in the walk-in cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Correct By: 28-Aug-2015

Observation: Milk in True T-12 cooler is cold held at 44.6°F. Other temperatures in the cooler range from 34-40F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Milk relocated to another cooler holding at 41F and less. Monitor food temperatures in all coolers regularly. Minimize time that foods and beverages are removed from refrigeration.
- TOXIC SUBSTANCES - SANITIZER CRITERIA
Observation: There is an excess of chlorine (over 200 ppm) in the wiping cloth bucket.
Correction: Sanitizer shall meet the requirements under 40 CFR 180.940. Recommended 100 ppm for the wiping cloth bucket. Excessive sanitizer levels may leave toxic residues on food contact surfaces. Correct By: 28-Aug-2015
- EQUIPMENT AND UTENSILS - MATERIAL FOR CONSTRUCTION AND REPAIR (repeated violation)
Observation: Garbage bags used for storing raw beef in walk-in cooler and other foods is not durable or sanitary for direct contact with food.
Correction: Discard equipment and utensils that are not: corrosion resistant, durable, able to withstand repeated warewashing, smooth, easily cleaning, nonabsorbent, and resistant to pitting, scratching, scoring or decomposition. Household use storage containers are generally approved and can be used provided they meet the performance requirements above. Correct By: 29-Aug-2015

Observation: Probe thermometer used in food establishment is not accurate to +/- 2°F and cannot be calibrated.
