- Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS
Observation: The bleach for the dishwasher is not being used according to EPA registered label use instructions and is at [200] PPM. Instead of using straight bleach dilute with water so that dishes are sanitized at 50-100ppm chlorine.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration.

Observation: Bacon is being improperly thawed by sitting at room temp.
Correction: Adjust procedures or methods to properly thaw foods.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: Non-food contact surfaces of stove top are soiled with food and grease debris.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
- LIGHT BULBS - PROTECTIVE SHIELDING
Observation: Lights located in womens bathroom noted with exposed wires, repair with a new fixture so that wires are not exposed.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs.
- MAINTAINING PREMISES, UNNECESSARY ITEMS AND LITTER
Observation: Noted multiple pieces of unused equipment in the kitchen area such as coolers, and a steam table. Have unused equipment removed so that area is more cleanable and usable.
Correction: Items that are unnecessary to the operation of the food establishment shall be removed from the premise.
