PROPER COOLING METHODS - CRITERIA Observation: Improper cooling methods are observed for chili and mushrooms in the reach in cooler. Prepared foods are cooled in the reach in cooler in containers with lids on the container not allowing for rapid cooling. Cool foods rapidly as discussed and measure the temperatures as the product is cooling to ensure proper cooling is occurring. Training material was provided to the operators.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.
NON-FOOD CONTACT SURFACES - CLEAN Observation: Non-food contact surfaces under the deep fryers are soiled with grease and food debris.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
