Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS Observation: There are fresh vegetables stored under raw meat inside the walk-in cooler.
Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables.
Critical: PHF/TCS, COLD HOLDING Observation: Milk in bar glass door cooler is cold held at 43°F.
Foods in east prep cooler in kichen are cold held at 45 F.
Correction: Maintain cold potentially hazardous foods at or below 41°F.
Both cooler thermostats were adjusted. Repair if needed. Monitor food temps in these coolers. Correct By: 27-Jun-2014
IN-USE UTENSILS, BETWEEN USE STORAGE (repeated violation) Observation: Knives were improperly stored btween prep tables.
Correction: Store utensils on a clean surface or on an approved knife rack.
