    Observation: Employee observed not washing hands after taking customer order/money and before making sandwich. Only one employee works here at a time.
    Correction: Before working with food, clean equipment, utensils, and single-use or single service articles food employees shall properly wash their hands.
  • WAREWASHING - CHEMICAL SANITIZER CONCENTRATION
    Observation: Sanitizer concentration in final rinse of warewashing sinks was low. Only one tablet was used.
    Incorrect type of test kit is available for monitoring sanitizer concentration. You have a chlorine test kit, but need quat test tapes.
    Correction: Use enough sanitizer tablets to provide at least 200 ppm quat.
    Provide a quat test kit to allow accurate determination of the Steramine Tablets sanitizer concentration.
  • CERTIFIED FOOD MANAGER – REQUIREMENT
    Observation: There is no Wisconsin Certified Food Manager for this establishment.
    Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 30 days. Correct By: 21-Apr-2016
  • HANDWASHING SIGNAGE
    Observation: No handwashing signage provided at handwashing sink in food prep area.
    Correction: Provide handwashing signage at all handwashing sinks used by food employees.
