FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION Observation: Food in walk in cooler is subject to potential contamination from rust/ chipping paint form shelves rusting.
Wooden shelving in kitchen prep area is deteriorating and are no longer smooth/easily cleanable. The shelves to the right (above vulcan stove/oven) are in especially bad shape.
Correction: The shelves in the walk in cooler either need to be replaced or they could be taken out scrapped/scrubbed and then painted.
The wooden shelves in the kitchen prep area will need to be replaced with either stainless steel shelving or coated material that can withstand moisture and daily wear and tear. Correct By: 31-Jan-2016
THAWING Observation: Fish and Shrimp was being improperly thawed in food prep sink. Meats being thawed in the sink must be under constant running water.
Correction: Adjust procedures or methods to properly thaw foods. In this sink you are only able to thaw 1 product at a time. Thaw items in the refrigerator until the food prep sink with running water is available. Correct By: 18-Dec-2015
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: Plexiglass on the knife rack is not maintained in good repair.
Correction: Repair equipment to good condition or remove from premise. You can either replace or discard the plexiglass on the knife rack. Correct By: 31-Jan-2016
FLOORS, WALLS AND CEILINGS - CLEANABILITY Observation: The wall in the prep area has a hole in it that needs repair. The walls are also dirty and need a good thorough cleaning and possibly a coat of paint.
Correction: Provide floors, walls, and ceilings that are designed, constructed, and installed so they are smooth and easily cleanable.Repair the hole in the wall. Clean the wall and paint if necessary. I also recommend using a material such as glassboard behind the prep table to facilitate easy cleaning. Correct By: 31-Jan-2016
