Observation: Raw garlic oil mixture is was found at room temperature on the wok. Raw garlic oil mixture should cold held at 41°F, because the mixture of the two creates a potentially hazrdous food.
Correction: Maintain cold potentially hazardous foods at or below 41°F
- FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR
Observation: Bulk Rice in orginial bag is being stored on the floor next to upright freezer and raw chicken in Walk in Cooler is being stored on the floor.
Correction: Store all food items 6 inches above the floor.
- EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS
Observation: Unpackaged food is being stored in plastic shopping bags, these bags are not designed for this purpose.
Correction: Use only food grade containers or food grade bags.
- WAREWASHING - RINSING PROCEDURES
Observation: Three compartment sink was not set up yet, but when asking about set up procedure soap and sanitizer were used then followed by rinsing.
Correction: Equipment and utensils shall be rinsed after washing in the rinse compartment of a 3-compartment sink, then followed by sanitization. Wash, Rinse, Sanitize. One ounce of bleach per four gallons of water (100ppm).
- UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - CLEAN DRY LOCATION
Observation: Single Service food containers are being improperly stored on the floor in the basement.
Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and off the floor.
