Observation: Grilled chicken was cooked to 145 degrees
Correction: Cook potentially hazardous raw animal foods to the appropriate time and temperature. Adjust procedures and methods. Grilled raw chicken must to cooked to at least 165 degrees for 15 seconds.

Observation: The fan grid and the ceiling of the walk-in cooler had a large amount of dust accumulated.
Correction: Clean and remove all encrusted grease deposits and encrusted soil accumulations from food contact surfaces of equipment. Clean and sanitize the fan grid and ceiling of the walk-in cooler.
