Observation: Shredded/Cut lettuce and tomatoes using time as a public health control for 4-hours is not properly marked or identified with a discard time.
Correction: Food items shall be marked or otherwise identfied with a time that is 4-hours past the point in time when the food was removed from temperature control. Discard food item.
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Wiping cloth used for wiping counters stored on counter tops.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.
- THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE
Observation: Several coolers are not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.

Observation: Warewashing area, including: sinks/sink basins, walls, floors, top of warewasher, etc., are not cleaned on a frequent enough basis to prevent build up of debris.
Correction: Clean all equipment and areas around equipment on a frequent enough basis to keep them from accumulating debris.

Correction: Reposition thermometer so that it is located in the warmest part of the refrigeration unit.

Observation: Walk in Freezer is not maintained in good repair - Excessive Ice build up on walls/floor. Beverage Air Cooler temped at 58F. Repair cooler - do not use until it maintains food at or below 41F
Correction: Repair equipment to good condition.

Observation: Exterior food equipment is not cleaned on a frequent basis.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.

Observation: Walls behind warewash area, soap/paper towel dispenser, floors behind equipment are not cleaned frequently enough.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
