Observation: The food prep cooler is not keeping potentially hazardous foods at or below 41F. Multiple food items in the upper unit and lower unit were found at 48F-52F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. The operator removed all of the potentially hazardous food items from this cooler and placed them into the walk in cooler at this inspection. The operator contact a refrigeration technician and the technician is scheduled for a visit today.

Observation: The bar's glasswasher did not provide a final rinse chlorine sanitizer concentration of 100 ppm. The concentration on arriving was 0 ppm.
Correction: The bar's glasswasher must deliver a 50 ppm final rinse according to the manufacturer's data plate. The operator replaced the sanitizer jug and primed the line. The concentration found after draining and refilling and cycling the machine was 50 ppm.

Observation: A hose bibb backflow preventor is not installed at the mop sink faucet.
Correction: Provide a hose bibb backflow preventor at this faucet connection. Correct By: 30-Mar-2015

Observation: The restaurant occasionally serves hamburgers cooked to the consumer's liking. The consumer advisory does not disclose that hamburgers cooked rare, medium rare, or pink in the middle may be undercooked.
Correction: A written consumer advisory that both discloses what food items are undercooked, and reminds consumers that eating the undercooked item is an increased health risk, is required. For example, place an asterisk next to the Burger section of the menu that leads to a footnote that states "Hamburgers requested rare, medium rare, or pink in the middle may be undercooked. Whether dining out or preparing food at home, consuming undercooked meats, fish, seafood, poultry, or eggs, may increase your risk of foodeborne illness.

Observation: The can opener has an accumulation of old food debris.
Correction: Clean and sanitize the can opener at least every four hours if it has been used. Correct By: 23-Mar-2015

Observation: Lights throughout the kitchen do not have the end caps that would hold in glass particles if the bulb should be shattered. The lights in the walk in cooler are not shatter-resistant bulbs.
Correction: Provide shielded, coated, or otherwise shatter resistant light bulbs. Make sure the caps are provided on the fluorescent fixtures. Correct By: 30-Mar-2015
