Correction: Design the sewage system in a manner that would preclude a direct connection between the sewage system and the drain from which food is placed. Remove the direct connection. THERMOMETERS - FOOD - ACCURACY Observation: Thermometer used in food establishment is not provided at this time. Correction: Calibrate or replace thermometer. WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES Observation: A chlorine test kit is not available for checking sanitizer concentrations for chemical dishwasher. Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions. CERTIFIED FOOD MANAGER – REQUIREMENT Observation: There is no Wisconsin Certified Food Manager for this establishment. Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within six months. PLUMBING - SERVICE SINK Observation: Service sink is not operable at this time. Correction: Provide at least 1 service sink or curbed cleaning facility. FLOORS, WALLS AND CEILINGS - CLEANABILITY Observation: Some ceiling tiles throughout the facility have water marks/are not tight fitting, a few tiles on the kitchen floor are chipped, and some areas on walls are not in contact or tore away Correction: wood is exposed, and some shelving available in the kitchen is wood. LIGHT BULBS - PROTECTIVE SHIELDING Observation: Lights located throughout facility are not shatter resistant.
