There are two pakages of meat (venison cheddar pepper snack and venison cheddar pepper sampler) that are labeled "not for sale." These two items appear to be custom processed meats for personal use. Operator states this is not performed at this facility, but was given to him by a customer. Correction: Discard foods from unapproved source or remove from the premises. Operator will take home. Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS (corrected on site) Observation: There are ready-to-eat foods (cole slaw) stored under raw shell eggs in walk in cooler. Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination. Operator relocated eggs to bottom shelf. Critical: RTE/PHF-TCS PROPER DATE MARKING Observation: Beans, cole slaw (mixed onsite), in walk in cooler are not date marked. Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. APPROVED PROCEDURES - ROP - HACCP PLAN Observation: Reduced oxygen packaging used for beef, pork, chicken, meatloaf, and any other foods does not have a Department-approved HACCP plan. Correction: Stop using reduced oxygen packaging until an approved HACCP plan is in place. Open packages of ROP foods and retain current date mark. Make sure these are used our discarded within 7 days of the current date mark. If you find any packages that are currently over the 7 days, discard them. WATER FROM APPROVED SOURCE - SAMPLE REPORT Observation: A recent water sample report for the establishment was not available.
