Observation: The sodium hypochlorite sanitizer in both the bar and kitchen warewash machines is not being used according to EPA registered label use instructions and is at 0 PPM even after numerous priming attempts.
Correction: Provide training to employees on proper use and concentration of sanitizer or repair or adjust warewashing equipment to provide proper sanitizer concentration. A call has been made to the maintenance person. Facility cannot open this afternoon until kitchen warewash machine reaches 50ppm and bar glasswasher reaches 100ppm. The maintenance person adjusted the machines, both machines were at the proper concentration and the facility was allowed to open that afternoon.

Observation: Thermometer in Frigidaire cooler measuring ambient air is not accurate to ± 3°F.
Correction: Calibrate or replace thermometer.

Observation: A spray bottle of bleach and water was not labeled with contents.
Correction: Label working containers.

Observation: The exterior door of off the kitchen is not self-closing or tight-fitting.
Correction: Make the door self-closing and tight fitting to prevent the entrance of insects or rodents.

Observation: Coleslaw and wonton wrapped mozzarella sticks (mozzarella sticks are wrapped with egg roll wraps) both of which are prepared at this facility are not date marked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.

ORDERED GLASSWARE TO BE CLEANED AND SANITIZED IN THE BAR'S 4 COMPARTMENT SINK OR TAKEN TO THE KITCHEN DISHWASHER UNTIL THE GLASSWARE WASHER IS REPAIRED.

Observation: The soda dispenser drip cups are visibly soiled.
Correction: Clean and sanitize the drip cups and dispensers on a regular basis to prevent bacterial growth.

Observation: The doors and door handles of the Federal 2 door freezer are sticky with food residue.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
