Correction: Maintain hot potentially hazardous foods at or above 135°F. Chicken breast served or discarded during inspection. Remaining chicken is 138F and above.
Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: Hard cooked egg in prep cooler is cold held at 48°F. Ground beef patties in upstairs True T-49 cooler are held at 43.5F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Discard foods which have been above 41F for more than four hours or for an unknown amount of time. Thermostats adjusted during inspection. T-49 cooler and food inside have fallen to 41F and less.
PROPER COOLING METHODS - CRITERIA (corrected on site) Observation: Improper cooling methods are observed for pork in walk-in cooler. Pan of pork cooked today was cooling and set on top of a pan of pork made yesterday (6/5). Yesterday's pork had risen to 50F.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15. Warm foods in cooling process separated during inspection.
WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER (corrected on site) Observation: Damp wiping cloth used for wiping counters stored on handwashing sink downstairs.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.
FOOD CONTAMINATION PREVENTED - MISCELLANEOUS CONTAMINATION (corrected on site) Observation: Observed employee use shoe to open walk-in cooler door.
Correction: Change methods or procedures to protect foods from contamination. Fecal bacteria which cause foodborne illness may be transmitted from bathroom floors to shoes, cooler door handle, hands, and foods touched with those hands. Handle was cleaned and sanitized during inspection.
EQUIPMENT AND UTENSILS - NONFOOD CONTACT SURFACES - CONSTRUCTED Observation: Particleboard shelving in kitchen above prep cooler and prep table is not nonabsorbent or smooth. Mounting back of potato cutter is unfinished plywood which is not nonabsorbent.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials. Replace and/or refinish shelving and mounting board for potato cutter. Correct By: 20-Jun-2014
