Observation: Employee observed not washing hands between glove changes and after handling raw meat.
Correction: Before working with food, clean equipment, utensils, and single-use or single service articles food employees shall properly wash their hands.
- Critical: PHF/TCS, COLD HOLDING (corrected on site)
Observation: Sliced ham and roast beef in the Excellance cooler were cold held at 46-52°F.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Discard temperature abused foods. Additional refrigeration added to the kitchen should be commercial grade. Home-type Excellance cooler was removed from the kitchen.
- Critical: FOOD CONTACT SURFACES - WAREWASHING EQUIPMENT, CHEMICAL, TEMPERATURE, Ph, CONCENTRATION AND HARDNESS (corrected on site)
Observation: The kitchen dish machine tested at 10 ppm Chlorine.
Correction: During the inspection Eco-lab repaired the dish machine and now the dish machine is maintaining 50 ppm Chlorine. Provide training to employees to test the dish machine daily with Chlorine test strips.
- Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING (corrected on site)
Observation: Prep counters in the kitchen are not sanitized.
Correction: Clean and sanitize all utensils and equipment before contact with food. A 100 ppm bleach water solution was set up during the inspection after discussing cleaning and sanitizing work surfaces in the kitchen.
- ASSIGNMENT
Observation: At the start of inspection, there was no person in charge designated.
Correction: A person in charge shall be provided on premises at all times during hours of operation.
- PROPER COOLING METHODS - CRITERIA (corrected on site)
Observation: Improper cooling methods are observed for alfredo sauce in the walk-in cooler. Alfredo sauce was said to be placed in the walk-in cooler at noon and it tested at 170 F at 1:30 p.m.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15. An employee transferred the sauce into a larger container to cool the thinner portion faster.
- CONSUMER ADVISORY
Observation: The consumer advisory on menu is missing the reminder.
Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition. Identify foods that could be undercooked.
- CLEANING, FREQUENCY AND RESTRICTIONS
Observation: The kitchen floors need to be cleaned under equipment and in corners.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.
