Observation: Cheese was placed on a wood cabinet that is not smooth, easily cleanable or designed to be food contact surface.
Correction: Discontinue placing food in direct contact with the cabinet.
- Critical: FOOD CONTACT SURFACES - WAREWASHING CHEMICAL SANITIZATION EXPOSURE TIME (corrected on site)
Observation: The warewashing machine is not functioning properly and does not sanitize the dishware and untensils. Facility discontinued use of the warewashing machine and will manually wash, rinse and sanitize.
Correction: Adjust warewashing operation procedures or equipment to assure utensils are exposed to the chemical sanitizer solution for the required time period.

Observation: Employee medicine is located on the top shelf of the walk-in cooler.
Correction: Relocate the medication to prevent cross contamination with food.

Observation: Several plastic covers used for left-over containers in Maximum upright cooler are torn/broken.
Correction: Provide food contact surfaces that are smooth, free of sharp edges and are free from breaks and cracks.

Observation: Drinking cup without cover was observed in food preparation area on top of freezer directly next to deep fryers.
Correction: Provide approved beverage container and keep out of food preparation/dishwashing area.
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER
Observation: Wiping cloths used for wiping counters not stored in a sanitizer solution - one cloth was hanging from a hook/handle at food prep area.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution between use.
- NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY
Observation: The ventillation hood filters are not cleaned on a frequent enough basis - grease and dust balls accumulated. All cooler/freezer doors and handles have heavy food and grease build up and are not cleaned frequently.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.
- LIGHT BULBS - PROTECTIVE SHIELDING
Observation: Lights located in food prep and dishwashing area are heat damaged and without end caps and have build up of insect deris inside light tubes.
Correction: Provide replacement shielded, coated, or otherwise shatter resistant light bulbs with end caps.
