Correction: Maintain cold potentially hazardous foods at or below 41°F. Lid was put back on prep table and discussed not filling the containers as full.
Critical: RTE/PHF-TCS PROPER DATE MARKING Observation: Preportioned bags of pre-cooked meats in the walk-in cooler and the prep tables are not datemarked.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
WAREWASHING - CHEMICAL SANITIZER CONCENTRATION (corrected on site) Observation: The chlorine sanitizer concentration of the dishwasher was 0 ppm
Correction: Chlorine sanitizer solution in the dishwasher should be 50 ppm. The manager called Reinhart to come repair the machine. The 4 compartment sink will be used in the mean time.
FOOD CONTACT SURFACES - SOILED Observation: The container holding toothpicks and the commercial can opener are soiled with food debris.
Correction: Maintain food contact surfaces in a clean condition.
WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER Observation: Wiping cloth used for wiping counters stored on the cutting board of the small prep table.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.
THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE Observation: The small prep table is not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: Plastic storage containers have broken sharp edges and shall be replaced.
Correction: Repair equipment to good condition or remove from premise.
CLEANING, FREQUENCY AND RESTRICTIONS Observation: The flooring under equipment and along the walls needs additional cleaning. There is buildup of grease and dirt.

Correction: Calibrate or replace thermometer.

Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.

Correction: Chlorine sanitizing solutions must be prepared at 100-200 ppm. Not to exceed 200 ppm

Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.
