Observation: Salsa was only food in need of date marking today. Manager was able to correct. DIscussed date marking of all itmes held over or made from scratch more than 24 hours.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.

Observation: No consumer advisory provided on menu.
Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition.
- FOOD PREPARATION SINK
Observation: The food prep sink is not being used for food prep. Today burrito meat was being strained in the pre-wash sink. USe the separate food prep sink for food prep exclusively.
Correction: A food preparation sink shall be provided for significant food preparation or in instances where food preparation is occurring below the flood level rim of a sink compartment such as thawing or vegetable washing.

- CONSUMER ADVISORY
Observation: Consumer advisory provided on menu needs to be updated. It is missing an asterik for all itmes available to be served under well done. It is also missing the sentence "May be cooked to order.
Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition.
- FOOD TEMPERATURE MEASURING DEVICES - PROVIDED
Observation: Various coolers had no thermometer in them. Pizza prep and home fridge.
Correction: Provide thermometers that are easily accessible and capable of taking temperatures in food.
- WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES
Observation: A chlorine test kit is available for checking sanitizer concentrations but the cap has been lost and strips are no longer usable since they have been wet.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions.
- CERTIFIED FOOD MANAGER – REQUIREMENT
Observation: There is no Wisconsin Certified Food Manager for this establishment. Al NEro's food certificate expired 5/14.
Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 3 months.
- EQUIPMENT AND UTENSILS CONFORM TO ANSI STANDARDS
Observation: Home style frigidaire refregerator is not ANSI certified or approved by the department.
Correction: Unapproved equipment shall be removed from food service.
