Observation: Food items in basement McCall cooler were being cold held at 60°F. These foods include boxes of shredded cheese and processed cilantro.
Correction: I did not see any documentation of temperature logs for this cooler. Cold potentially hazardous foods must be maintained at or below 41°F. These foods must be discarded. No foods may be stored in this cooler until it is repaired and can maintain required temperatures. Correct By: 18-Jun-2014
- EQUIPMENT AND UTENSILS - FOOD CONTACT SURFACES, CLEANABILITY
Observation: Salsa cooler floor has pulled away. Water has pooled on the bottom.
Correction: A work order has been put in for the repair. The condensation issue needs to be addressed also to provide proper drainage.
- FOOD CONTACT SURFACES - SOILED
Observation: Interior of ice machine is soiled.
Correction: Empty, clean and sanitize ice machine. Maintain food contact surfaces in a clean condition.
- NON-FOOD CONTACT SURFACES - CLEAN
Observation: Basement walk-in cooler - there is a lot of old vegetables on the floor, below the shelving.
Correction: Remove all food debris from walk-in cooler floor. Maintain cleanliness.
- FLOORS - WATER FLUSHING - DRAINS PROVIDED
Observation: Basement floor tiles have water pooled beneath them. Power went out recently and sump pump stopped working. This area does not have floor drains or is not graded to drain.
Correction: This seems to be a reoccurring issue with water pooled in the basement, even though drain tile work was done 2 months ago. A battery backup is needed for the sump pump. Basement floor needs to be graded to drain.
