Observation: Slice tomatoes (53 F), Cheese (54 F) and lettuce (54 F) in cooler #18 (deli cooler) is cold held above 41°F. The items were voluntarily discarded and the person in charge will contact the repair company.

Observation: Improper cooling methods are observed for Pork tenderloin in the walk-in cooler. The item noted wrapped tightly. Violation corrected by pulling the plastic wrap back so that it can vent.
Correction: Adjust methods or procedures to facilitate cooling as described in 3-501.15.

Observation: California Black Bean Pasta Salad, Pork Italiano Noodle Soup, Reuben Chowder and Taco Dip are missing full ingredient labeling information. The person in charge stated that they receive the items from their commissary in Lamyra. They contacted the facility and discussed that they do not want to receive any items without complete labeling information.
Correction: Label information shall include: common name of food, ingredients in order of predominance, quantity, name of business or manufacturer, major food allergens, and nutritional information.

Chicken salad wrap in the grab and go cooler is cold held at 46 F. The violation was corrected during inspection by moving all the potentially hazardous food to a different cooler. The Food and Beverage Manager stated that they will be purchasing a new cooler with doors and removing the existing unit.
