    Observation: Packages of vacuum packaged fish are thawed and stored in vacuum sealed packages in the walk-in-cooler.
    Correction: Once thawed, the fish must be removed from the vacuum sealed packages or otherwise opened to re-introduce oxygen to the package.
  • Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS
    Observation: Employee observed handling English muffins with bare hands.
    (CORRECTED DURING INSPECTION) Discussed handling of ready-to-eat foods with employee and employee immediatly gloved to handle ready-to-eat food items.

    Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.
  • Critical: PACKAGED AND UNPACKAGED FOOD - RAW OVER RTE-FOODS
    Observation: There are ready-to-eat tomatoes stored under raw sausage patties in the line prep cooler and baked potatoes stored under raw beef in the walk-in-cooler.
    (CORRECTED DURING INSPECTION) Employee re-arranged both areas so raw food products are stored below ready-to-eat foods.

    Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

    Observation: Green salsa in line prep cooler [top portion] is cold held at 51°F.
    (CORRECTED DURING INSIPECTION) Employee disposed of the salsa.

    Correction: Maintain cold potentially hazardous foods at or below 41°F
  • TIME AS A PUBLIC HEALTH CONTROL - PLAN APPROVAL AND PROPER METHODS
    Observation: No time as a public health control plan is available for review or processes were observed that indicates a food was not properly prepared before using time as a public health control. Green salsa being used on the line top prep cooler, salsa and spinach by the egg preparation area for breakfast is disposed of after the four hour breakfast period, but with no written plan to do so. .
    Correction: Food items out of temperature control shall be discarded and any food improperly prepared that is considered unsafe shall be discarded. Time as a public health control shall not be used until a plan is provided and readily available for review by the regulatory authority.
  • CONSUMER ADVISORY (repeated violation)
    Observation: The consumer advisory on menu is missing the disclosure statement pointing out the particular food item pertaining to the reminder statement on the bottom of the menu.
    Fact sheet will be emailed along with the inspection report.

    Correction: Provide a consumer advisory for animal foods served in a raw or undercooked condition.

    Observation: The can opener blade is visibly soiled.
    Correction: Maintain food contact surfaces in a clean condition.

    Observation: Wiping cloth used for wiping counters stored on the prep line surfaces..
    Correction: Cloths used for wiping counters shall be stored in a sanitizing solution.
  • NON-FOOD CONTACT SURFACES - CLEAN
    Observation: Non-food contact surfaces of the catch cup of the soda guns have a slime build-up present in the bottom of the cup.
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.

    Observation: The ice in the ice machine's bin is exposed mold on ceiling of the ice bin when droplets of water form on the ceiling and drip onto the ice.
    Correction: Clean and sanitize the surfaces of the ice machine at the frequency that precludes mold. Correct By: 01-Oct-2014

    Observation: The consumer advisory is missing the disclosure for undercooked food items (rare or medium rare hamburgers and steaks).
    Correction: The consumer advisory must disclose that rare or medium rare hamburgers and steaks may be undercooked. For example, place a symbol next to the hamburger and steak items on the menu that leads to a footnote that states 'Hamburgers and steaks ordered rare or medium rare may be undercooked.     Observation: The drain pipe from the bar's ice bin has an accumulation of slime blocking the end of the pipe. Drain water may accumulate in the ice bin and contaminate the food ice.
