Correction: Dispose of the whipped butter and do not store at room temp. This product must be refrigerated or use time as a control. The product may be held above 41 F for 4 hrs then any remaining product must be disposed of. If the product temp never exceeds 70 F it may be stored for up to 6 hrs. The time the product was removed from refrigeration must be marked on the product when using time as a control and a written procedure must be available.

THERMOMETERS - FUNCTIONALITY - INTEGRAL OR PERMANENTLY AFFIXED MEASURING DEVICE Observation: The Beverage Air and Pepsi display coolers are not equipped with an integral or permanently affixed temperature measuring device.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device. Provide thermometers for these units.
