    Observation: Shredded chicken, pico de gallo, chicken stock, and cooked beans in the walk-in cooler were not labeled with a date mark. All food items were labeled during inspection.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
  • IN-USE UTENSILS, BETWEEN USE STORAGE
    Observation: Singe-use containers without handles were being stored in bulk ingredient containers. Chip bowls were stored in bulk chip containers. Ice scoop at bar was stored with handle touching the ice.
    Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F.
  • EQUIPMENT AND UTENSILS - CAN OPENERS - SHARP
    Observation: Cutting or piercing part on can opener is in need of replacement.
    Correction: Replace cutting or piercing part to reduce the hazard of metal fragments caused by dull or worn parts.
  • NON-FOOD CONTACT SURFACES - CLEAN
    Observation: The following areas noted in need of cleaning:
    -Under soda machine
    -Outside of chip containers
    -Food prep sink air gapped drain
    Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.

    Observation: Clean equipment was observed being towel-dried. Management explained to employee doing dishes to let dishes dry before polishing with a disposable paper towel.
    Correction: Air dry all clean equipment before storage and before contact with food.

    Observation: Employee observed not washing hands after handling dirty dishes and then handling clean dishes.
    Correction: Wash hands between handling dirty dishes and clean dishes.

    Observation: Temperature in Delfield Cooler was recorded at 49-52F. Manager believes the cooler is in a defrost cycle. Food was moved to walk-in basement cooler during the inspection.
    Correction: Maintain cold potentially hazardous foods at or below 41°F

    Observation: Ice maker, soda guns, and can opener were soiled. Can opener was cleaned during inspection.
    Correction: Maintain food contact surfaces in a clean condition.
