All food should be properly protected from contamination during storage, preparation, display, service, and transportation. FOOD (ICE) NOT PROTECTED DURING STORAGE INSIDE OF THE ICE MACHINE. OBSERVED BLACK MOLD GROWTH ON INTERIOR CONTACT SURFACES OF THE ICE MACHINE. UNIT TAGGED BY CDPH. TAG WAS REMOVED ON 4/27/10 AFTER EMPIRE COOLER SERVICES CLEANED AND SANITIZED THE MACHINE. SERIOUS VIOLATION 7-38-005A.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE WIRE RACKS IN BOTH WALK-IN COOLERS, AND WIRE RACKS IN THE BEER/WINE COOLER.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. OBSERVED MISSING FLOOR TILES INSIDE OF THE WALK-IN COOLER. MUST PROVIDE. VINYL FLOOR TILE IN DISREPAIR UNDERNEATH THE COOLERS. MUST REPLACE.
The walls and ceilings shall be in good repair and easily cleaned. OBSERVED WATER STAINED CEILING TILES IN THE LIQUOR STORAGE ROOM, RESTROOMS NEAR THE BACK BAR. MUST REPLACE.
Toilet rooms shall be completely enclosed and shall be vented to the outside air or mechanically ventilated. THE VENTILATION FANS FOR THE RESTROOMS ARE NOT OPERATIONAL. MUST REPAIR.

COOKS LINE COOLER FOUND AT 51.3F. NO FOODS IN COOLER AT THE TIME OF INSPECTION. CERTIFIED MANAGER PERFORMED THE PROPER CORRECTIVE ACTION AND STATES ALL FOODS IN COOLER WERE DISCARDED WHEN COOLER WAS DISCOVERED TO NOT BE WORKING. COOLER TAGGED HELD FOR INSPECTION AND MUST NOT USE UNTIL REPAIRED, MAINTAINS A TEMPERATURE OF 40F OR BELOW AND C.D.P.H. CONTACTED FOR INSPECTION AND TAG REMOVAL. NO CITATION ISSUED.
OBSERVED APPROXIMATELY 20 TO 30 MICE DROPPINGS ALONG BASEBOARD UNDER UNUSED REAR BAR AND PRIVATE PARTY ROOM. 30 TO 40 DROPPINGS THROUGHOUT REAR LIQUOR STORAGE ROOM UNDER ALL STORED ITEMS. OBSERVED OVER 100 RAT DROPPINGS THROUGHOUT ENCLOSED REAR OUTDOOR PATIO BEING USED FOR STORAGE. INSTRUCTED TO REMOVE ALL MICE DROPPINGS, CLEAN AND SANITIZE UNDER ALL SHELVING. REMOVE ALL RAT DROPPINGS FROM REAR PATIO, REMOVE ALL DEBRIS ON GROUNDS, CARDBOARD BOXES, WOOD DEBRIS, UNUSED COOLERS, EQUIPMENT, FURNITURE AND AWNINGS. ALL OTHER NEEDED ITEMS MUST BE STORED ELEVATE AND ORGANIZED. MUST PREVENT ANY ITEMS THAT PROMOTE RODENT HARBORING. SERIOUS CITATION ISSUED 7-38-020.
