All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines. OVER 1OO RAT DROPPINGS WERE FOUND IN THE FRONT AND REAR BASEMENT STORAGE AREAS AND HOLES WERE FOUND IN THE WEST WALL OF THE BUILDING INSIDE AND OUTSIDE. CLEAN UP ALL EVIDENCE OF RODENT ACTIVITY AND FILL IN ALL POSSIBLE ENTRY POINTS. ANDERSON PEST CONTROL DOCUMENTED DROPPINGS IN SAID AREAS ON 4/9/10
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. WASH, RINSE AND SANITIZE THE FLOORS THROUGHOUT THE BASEMENT AND THE KITCHEN FROM CORNER TO CORNER.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. INSTALL A WORKING THERMOMETER IN THE PREP COOLER.

RODENT BURROWS WERE FOUND ALONG THE WEST OUTER WALL AND BEHIND THE PLUMBING STACK, SEAL UP ALL POSSIBLE ENTRY AND HARBORAGE POINTS.

The walls and ceilings shall be in good repair and easily cleaned. THE WALLS AND CEILINGS IN THE BASEMENT HAVE GAPS AND OPENINGS WERE PESTS CAN HARBOR. Clean and maintain the walls and ceilings so they are smooth and sanitary from top to bottom.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. THE ICE MACHINE HAS A LITTLE BUILDUP ON THE INTERIOR LIP, WASH, RINSE AND SANITIZE THE MACHINE INTERIOR.
Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination. THE ICE SCOOP HOLDER IS DIRTY INSIDE, WASH, RINSE AND SANITIZE THE HOLDER AND MAINTAIN IT CLEAN.
