The walls and ceilings shall be in good repair and easily cleaned. WALLS AROUND 3-COMP SINK & SOME PREP TABLES, DUSTY CEILING VENTS & FILTERS OF HOOD-MUST BE KEPT CLEAN. ANY WATER-STAINED CEILING TILES IN REAR MUST BE REPLACED. cAULKING ON SPLASHGUARD OF 3-COMP SINK MUST BE REPLACED.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. ANY CLUTTER OR UNUSED EQUIPMENT IN SMALL STORAGE ROOM MUST BE MINIMIZED, CLEANED & COVERED iF NEEDED, & STOCK MUST BE ELEVATED OFF THE FLOOR.

INTERIOR FLOOR OF UPRIGHT FREEZERS IN REAR, PLUS THE AIR VENTS & FLOORING OF THE SUSHI SELF-SERVICE CASE, MUST BE FREE OF DUST/FOOD DEBRIS.
