OBSERVED APPROXIMATELY 2LBS MARINARA SAUCE AND 2LBS CHEESE SAUCE BEING HELD HOT IN DOUBLE BOILER PAN AT IMPROPER TEMPERATURES OF 79.5F & 84.6F. INSTRUCTED ALL PREPARED FOODS MUST BE RAPIDLY HEATED TO 165F. FOODS DISCARDED. MANAGEMENT STATES ESTIMATED VALUE TO BE $10.00.
All food shall be protected from contamination and the elements, and so shall all food equipment, containers, utensils, food contact surfaces and devices, and vehicles. OBSERVED BLACK SLIME SUBSTANCE INSIDE ICE MACHINES WATER RESERVOIR WHERE ICE IS BEING MADE. ALSO EXCESSIVE RUST ON INTERIOR DOOR OF ICE MACHINE, MUST REMOVE. ALL ICE DISCARDED. MACHINE TAGGED HELD FOR INSPECTION AND MUST NOT USE UNTIL CLEANED AND SANITIZED AND C.D.P.H. CONTACTED AT 312-746-5426 FOR INSPECTION AND TAG REMOVAL. ALSO OBSERVED CROSS CONTAMINATION FROM RAW TO READY TO EAT MEATS. UNCOVERED RAW CHICKEN BEING STORED OVER READY TO EAT TURKEY AND IMPROPERLY COVERED READY TO EAT QUESADILLAS (COVERED WITH A CLOTH TOWEL). RAW BEEF ALSO STORED OVER COOKED CHICKEN BREASTS, SLICED HAM AND CORNED BEEF. ALL FOODS DISCARDED. MANAGEMENT ESTIMATES APPROXIMATELY 18LBS WITH ESTIMATED VALUE TO BE $75.00.

PEST CONTROL RECENT INSPECTION ON 11-4-10 NOTED NO INSECT ACTIVITY IN ANY AREAS. INSTRUCTED TO ELIMINATE FLY ACTIVITY AND RECOMMEND PEST CO. SPECIFICALLY TREAT AREA FOR DRAIN FLIES.
