FOUND 2 LBS JERK CHICKEN, 1 LB OF RICE ON PREP TABLE AND 2 LBS COOKED FISH IN SAUCE, 1/2 LB BEANS IN 2 DOOR STAND UP COOLER AT TEMPERATURES RANGING FROM 47.6-73.3 DEGREES F. TOTAL WEIGHT 5 1/2 LBS, VALUE $20. ALL WEIGHTS AND VALUES ARE APPROXIMATIONS. INSTRUCTED MANAGER TO DISPOSE AND DENATURE. MANAGER COMPLIED. 2 DOOR STAND UP COOLER WAS MAINTAINING PROPER TEMPERATURE. Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F. IMPROPER SANITIZING RINSE IN DISH MACHINE.
