Swiss cheese slices 45F [cos - discarded], american cheese slices 48F [cos-discarded] - stored 3 hours on ice. Reach in cooler: tzatziki gyro sauce , 45F [cos - discarded], grated mozarella 45F [cos - 42F], mixed shredded cheeses 48F [cooler at 42F]. Continue cooling container of mixed shredded cheeses in freezer. Time as PHC procedure provided to manager as alternative for holding of cheese slices at cookline.
