  • Basic - Aluminum crate on the soda machine has rust that has pitted the surface. Observed rubber coating peeling off surface rusty Crate located in front service area.
  • Basic - Cutting board has cut marks and is no longer cleanable. Observed both cutting boards on front service line.
  • Basic - Fan cover in walk-in cooler has accumulation of dust/debris. Observed in the beverage cooler
  • Basic - Lights in food preparation, food storage or warewashing area missing the proper shield, sleeve coatings or covers. Walk in freezer located on 4th floor, manager will notify Engineering.
  • Basic - Old labels stuck to food containers after cleaning. Plastic pans stacked underneath prep counter.
  • Basic - Working containers of food removed from original container not identified by common name. Observed on shaker used for salt and pepper, label Worn off. **Corrected On-Site**
  • High Priority - Thermotape failed to turn black to indicate the sanitization temperature of 160 degrees Fahrenheit was achieved on the dish surface. Discontinue use of dishmachine for sanitizing and set up manual sanitization until dishmachine is repaired. Dishmachine checked four times with Sous Chef , Engineering notify at time of inspection.
  • High Priority - Wiping cloth sanitizer solution exceeds the maximum concentration allowed. Checked concentration of oasis 400 ppm located In front service line, rechecked sanitizer 200 ppm. **Corrected On-Site**
