Yea, this area isn't really built for bike riding. I'm sure they'll get around to it, but right now it just isn't. That goes for MP and the major roads like 17, 41, Clements Ferry, etc
Roads like Clements Ferry & 41 are single lane roads - which was fine back in the day when it wasn't so populated. Now...forget it. If/when there is a bicyclist - it is an extreme hazard for all.

Once you come drive around, you'll see. If riding a bike is a necessity, I'd look somewhere within a 5 mile radius to your workplace.

If you want to ride the bike, you will have to live off Spruill ave in North Charleston, you can then avoid the interstate. But, Fletc is located in the hood. The area around Fletc is one of the worst in all of Charleston. Really, fletc is in a terrible area to bike to. You could give up living in Mt. Pleasant and live in North Charleston and bike to Fletc. Park circle in North Charleston is closer and you could ride the bike down Spruill. But, again Spruill Ave is one of the poorest, most unsafe areas in all of Charleston.

Based on schools, I think I am going to stick with Mt Pleasant. Is all of Mt Pleasant considered good areas? I recognize there are some areas with older homes and some with new construction. Should the ease of commute to/from North Charleston be my primary driver?

It's a matter of personal values/preference but for me, a long commute would be a deal killer. Where in Mt P will have a lot to do with your budget but most of Mt P is considered good (though perhaps for different reasons). If you will be commuting outside of rush hours, then the drive will be considerably easier.

I live in the most northern reaches of mount pleasant and a commute to North Charleston is right at 30 minutes if you're on the road before 7:30. After 7:30 I have no idea.

The bonus is the sun is at your back for both directions of your commute.

Where in Mt. Pleasant would be the demarcation line between taking 526 or 17 to North Charleston? In other words, where would it simply make more sense to take 526 instead of 17 and vice versa?

17 will have you in much more traffic to get over the bridge onto I-26. Traffic will decide your routes for the most part. One accident on either bridge, your going the other direction.

Taking 526 to FLETC is a loooong way around. You'd only do that if there were an accident on the bridge. Anywhere south of the Isle of Palms connector will be an easy commute via 17 and 26. If you're willing to add drive time, you can go farther into North Mt P. Then you're dealing with 41 traffic and Wando High School traffic. Both of which can extend your drive time to well beyond the norm.

Personally, I'd be looking at something south of IOP or even inside of 526. The out of control residential development going on in North Mt P is going to lead to more and more traffic headaches , and the properties south of the IOP connector are becoming much more desirable.
