Make your own bloody hummus, it is the easiest thing in the world to make. Buy some skewers and make your own kebobs. Also, pretty easy. Geeeez, I need some wine!!
By "old-timers" are you referring to people who were born and raised here or have lived here a long time? I ask because as a newcomer of about three years, I can say that the "old-timers" I have met have been extremely kind and accomodating. Look at this board's own Ani, who seems to be one of the most sensible, considerate and friendly people around, yet has lived here a large portion of her life.

Naan too. Handmade and frozen. Just reheat in your oven.
Kabob Grill in Stonecrest, also authentic.
Sofram Turkish cuisine in Pineville.
Greek? Maybe Greek Isles or Akropolis (in Ballantyne). If neither are authentic enough for you, you can go buy your own, fresh, honest-to-goodness straight off the boat imported Greek ingredients from a truck loading dock at Minos off Independence. (Bring cash or check, no credit card.)
Cafe Nirvana and Tamarind, fantastic, authentic Indian cuisine in South Charlotte. Don't forget Jaipur off South Blvd.
Authentic Mexican, too many places to mention all, but Don Pedro in So. Charlotte for mid-end and Senor Tequila off Rea for higher end cover a couple of ranges.
I don't appreciate Vietnamese or Thai like I should, but even so I know huge fans of both are happy up in the University area.
The only thing remotely missing might be Chinese for me. I have not found a Chinese restaurant I truly love, but what I am missing is more American-style Chinese that's good, not authentic Chinese. I can't speak to either eloquently. Sad but true.

Thanks. I have no problem finding the ethnic foods I like. There's Sangam's Indian, several Thai, Vietnamese, many Chinese and Mexican in Cornelius. Don't care too much for Italian, but it is everywhere around her as well.
Been there, done that. I even have a bottle or two of everclear in the ole freezer.
